It seems like every few years we’re introduced to some natural substitute for refined cane sugar, promising all kinds of health benefits. Are any of them actually better for you? Let’s take a closer look.

Show me a healthy version of a dessert recipe and I can probably tell you in what decade it was written. At one point, it seemed like every recipe used stevia, then it was agave syrup, then maple syrup. Lately I’m seeing coconut sugar everywhere. Different sugars seem tp come and go like fashion.
I think it’s great that people are looking for alternatives to refined sugar. After all, refined sugar has zero nutritional value and it causes spikes in blood sugar. But it’s also confusing, don’t you think? Which sugar is best for my health? Which sugar will work correctly in my recipe?
Below is a practical comparison table of common nutritive sweeteners. The numbers are approximate averages, because minerals vary by source and processing. I’ve used 1 tablespoon (about 20 grams) for comparison, since that’s a fairly common amount in cooking and baking.

Important Notes
- Micronutrients exist, but only in trace amounts.
- Even the “most nutritious” sugars (panela, maple, coconut) contribute only a few percent of daily mineral needs per tablespoon. They should not be considered meaningful nutrient sources.
- Agave’s low GI is misleading.
- Agave is very high in fructose. It doesn’t cause spikes in blood sugar but it can put a strain on your liver. If used frequently, agave can elevate triglycerides and lead to insulin resistance.
- Brown sugar and panela taste similar, but have significant differences.
- Brown sugar is just refined white sugar that has molasses added back into it. Panela is whole evaporated cane juice, minimally processed, so it retains more flavor and more minerals.
- Coconut sugar is marketed as healthy, but is nutritionally similar to brown sugar.
- Glycemic index is slightly lower than refined white sugar, but it’s still mostly sucrose.
In Recipes
In addition to making things sweet, sugar enhances food in several ways. It helps retain moisture, and improves browning/caramelization, among other things. Choosing the right sugar for your recipe is more about texture and flavor than about nutrients. Let’s look at how sugar acts in different recipes.
- Refined granulated sugar: the most common type of sugar is great in baked goods like breads, cookies, and cakes. It helps keep baked goods moist without making them sticky or heavy.
- Refined extra-fine sugar (also called “caster sugar”): this type of sugar is used in baked goods when we need super smooth texture. It is often used in icing or in delicate foods like meringues.
- Refined confectioners’ sugar: this super-fine powder often contains cornstarch to prevent caking. It must be cooked to remove the raw taste of the cornstarch. It is often used in candy-making and in icings and glazes.
- Panela and brown sugar: both of these sugars contain molasses, adding rich flavor and extra moisture to your baking. Cookies made with either of these will turn out chewy and soft rather than crispy. Panela is less processed than brown sugar.
- Syrups (like agave and maple): with their high water content, syrups are difficult to use in baked goods. I think the best use is in candies and puddings.
- Stevia and artificial sweeteners: stevia and sugar alcohols can cause gas and bloating for some individuals. There is ongoing research into how these sweeteners affect cravings, and how they affect the important microorganisms in your gut. (At one point there was concern that saccharine might cause cancer but more recent research has disproved that theory.) Finally, these sweeteners are intensely sweet while having very few calories, but many of them also have a bitter aftertaste.
Conclusions and Recommendations
I’ve really only touched on a handful of sugars and sugar substitutes. One article I read during my research mentioned 26 different types of sugar! Still, I hope this brief overview has given you an idea what to look for, and how to choose the right sugar for your needs.
My personal recommendations include:
- Unbleached granulated white sugar: suitable for a wide variety of recipes, and of course in beverages too. If I need a finer grind for a meringue, I can put some granulated sugar in my spice grinder.
- Granulated panela: perfect for chewy cookies, brownies, and heavier cakes. Also delicious in coffee, by the way.
- Honey: natural, unrefined honey contains many micronutrients and is a favorite in our household for tea, or drizzled on top of yogurt or silken tofu. If you’re not vegan, it’s good to keep some honey on hand.
- Dates: I know I didn’t mention them before, but they really do come in handy once in a while. They’re the only sweetener in my chocolate-quinoa truffles. I also like to plop a couple of dates in the blender when I make oat milk.
