Yuca Starch Squeeze Noodles

This is by far the fastest and easiest way to make angel-hair pasta. It uses only 3 ingredients, and it’s a fun recipe for kids to make too!

Yuca Starch Squeeze Noodles

Equipment

  • 1 Condiment bottle with squeeze top, or a plastic bag

Ingredients
  

  • 1 Large egg, beaten
  • 1 Pinch of salt
  • ½ cup Yuca starch (approximately)

Instructions
 

  • Heat a pot of water to a simmer.
  • Mix egg and salt in a bowl.
  • Gradually whisk in yuca starch until batter forms a thin V falling off the whisk, and ribbons of batter remain visible for about 3 seconds before melting back into the batter.
  • Pour batter into a condiment bottle with a squeeze top. Or, put the batter into a sandwich-size plastic bag with a zipper top, and cut a small hole in one corner.
  • Squeeze batter into pot while moving your hands continually in a spiral. Noodles should form instantly. If they dissolve, add a little more yuca starch. If they fall to the bottom and form clumps, add a very small amount of water.
  • As soon as noodles form, scoop them out with a slotted spoon and drop them into ice-cold water to firm up.
  • When ready to serve, drain the noodles well and serve with your favorite hot or cold sauce.
