Umami Powder

This seasoning mix adds amazing “meaty” flavor to vegan dishes. I use it in my imitation chicken and beef mixes, and to add a punch of flavor to soups and sauces. It takes about half an hour to make, and yields enough to last for months.

Add a punch of flavor to vegan meat substitutes, as well as soups and sauces.
Prep time 30 minutes

Equipment

  • Spice grinder or coffee grinder
  • Skillet

Ingredients
  

  • 4-6 Dried shiitake mushrooms
  • 2 tbsp Nutritional yeast
  • 2 tsp Salt
  • ½ tbsp Sugar
  • ½ tsp MSG

Instructions
 

  • Grind the mushrooms to a fine powder. You will need about 4 tablespoons.
  • Grind remaining ingredients to a fine powder.
  • Combine all ingredients and mix well.
  • Strain powder into a jar. Remove any large pieces and grind again as needed.
  • Store in a well-sealed jar at room temperature. If you have a desiccant packet, you can put that in the jar to absorb humidity. (Do not open the packet.)
